Hello!
Here is my super easy recipe for a delicious, moist Banana Bread. Perfect for when you have company over to call!!
You can also add whatever extras you fancy into your cake like, chocolate chips, crushed mixed nuts, desiccated coconut, raisins… the flavours are endless! Happy baking 🙂
For best results use really ripe (almost black!!) bananas!
Ingredients:
- 3 large ripe bananas
- 75g vegetable oil
- 40g soft brown sugar
- 40g treacle (optional)
- 225g self-raising flour
- 1/2 tsp baking powder
- 1 tsp cinnamon
- a few grates of nutmeg
- 1/4 tsp mixed spice
Extras:
- 50g dried fruit
- 50g crushed mixed nuts
- 40g desiccated coconut
- 35g chocolate chips
Method:
- Preheat oven to gas mark 6 and grease a loaf tin with butter. Add a piece of baking parchment to the bottom and leave for later.
- Mash the bananas in a baking bowl until smooth and then add in the oil, treacle and sugar. Give a good mix then add in the baking powder and spices of your choice.
- After another good mix, sift in the flour and pour into your prepared loaf tin.
- Bake for 20 mins and then cover with foil and turn heat down to gas mark 4-5. Cook for a further 20 mins.
- Take the cake out of the oven and leave too cool in the loaf tin for 10 mins. Then turn out onto a rack and leave to cool completely.
- Be careful and don’t burn yourself!
- Slice and then serve with a nice cup of tea, enjoy! 🙂
